I hope I got this right by saying its in Gmaj...
Please correct me if I'm wrong and I will make the necessary correction.
I tried to capture a few of the many variations Veillon does.
On E Koad Nizan, Veillon uses a Eb flute and thus plays one semitone higher than what is transcribed here.
This tune is fine for beginners.

Key of Grannie“s Hornpipe
Lovely tune, it is. It is in C lydian. Every four bar pattern begins with a c and ends with a G major chord leading back to c.

Key enigma
As I wrote, I would gladly change the Key signature.
BUT... excuse my ignorance here Reelin' man:
I assume you are suggesting C mixolydian. The problem is that this key is not suggested in the list of keys we can choose from when we enter a tune in TheSession.
