I haven't heard this album but it is possible the overall instrumental pitch could have been jacked up a half-tone - not an uncommon practice nowadays. The effect would be to brighten the sound.
The test for this when fiddle music is being played is to listen for what should be an open string in the music (e.g. D). If the instrument has been tuned up a half-tone so that it sounds like the tune is in E-flat then that E-flat will sound as an open string. Otherwise, if it really is being played in E-flat with normal tuning the E-flat won't sound like an open string - in fact the overall sound of the tune and the fiddle will be quite different.
