I don't think she learned it on the fly. It looked more like she was thinking that they were going into something else, and it took her a sec to figure out what he was playing.
Not only did they switch from a jig to a reel, he played the beginning of the tune pretty differently than it would normally go. I would be inclined to think that he was trying to go into something else, and ended up in Tuttles. (Thus her little smile there...)
