I know all tunes are good for this, but what i mean is anyone care to list tunes they learned on fiddle that where ......... milestones as it were, and a noticable improvement was made in all aspects of playing?.
Dowd's Favorite - Rolls on the second finger F natural and c natural.
Humours of Westport - rolls on f natural, rolls on Bb. Double stops with A and f
Consindin's Grove - This is the tune that really made my bowing come together, suddenly every tune I would play after this point would have way more nyah than when I was a beginner. Kevin Burke plays a similar 2 parter that he calls Paddy Cronin's that will do the trick too.

I hope this helps you a bit, along my ITM Journey there was always tunes / Reel's I wanted to learn but just was not good enough at that time. But in my jounney, you could say they helped me with building techneque's e.t.c.
My Love is in America, Boy in the Gaf, An Phis Fliuch, The New Mown Meadows, The Castle, Kylebrack Rambler, Mouse in the Attic (top d!), and the two most recent, Diplodocus and The Toss Pot. More or less in that order. Funny how I remember them, now that you mention it. Each one affected all the other tunes I already played, and I know when I'm playing a tune that I learned before each of these stages, because it lacked something that I had to re-learn, if you know what I mean. Interesting.
A tune like http://www.thesession.org/tunes/display/177 requires a position change for fiddle and can be challenging, but on Whistle its easy.
So technical challenges vary considerably depending on the instrument.
Tunes can be simple on mandolin but very tricky on fiddle.
A tune like the yellow Tinker, in Am is OK for fiddle, but on C#/D box.... Not so [ im told]
Simple pipe tunes can be extremely Awkward on fiddle. So its very relevant what instrument we are talking about.
The Golden Eagle (in G) for changing from 1st to 3rd position (on fiddle/mandolin)
The Acrobat for playing in flat keys (Bb and F), for triplets ('melodic' triplets, as opposed to 'rhythmic' ones) and for chromatic runs.
The particular techniques used in these tunes may be superfluous to most traditional playing, but it is always good to have a little technique in reserve, just for emergencies.
None of the individual bits are horribly difficult, but in aggregate I find it a challenging tune to make through even once without tempo or phrasing problems.
