Im currently in the market for a new(second hand) bouzouki.
Im going to be selling my bouzouki if i get that all elusive new sound in another bouzouki id like.
Id really appreciate all your thoughts on high quality bouzoukis. sound, woods, sustian, price, pick ups,
Im looking for a warm full sound with good sustain and attack( but not too much attack as most my work is done in concert and studio now)
Hopefully ill have a clearer idea after hearing your ideas.
Ill be prepared to spend a minimum of €2000, so within reason, money wont really be an issue.
"€2,000" and "money won't be an issue" are a bit contradictory. There's no point in even thinking about makers like Sobell unless you can at least quadruple your budget.
I'm sure you'll get lots of suggestions. I recommend giving Nigel Forster a look. He's been a long time Sobell apprentice prior to setting up his own shop and really embodies a lot of the quality that Sobell is known for in his work. Really you need to find it yourself, sad but true.
Check out every one you see and hear, in concert, club and festival. Ask the musicians where and who they got it from.
It might be worth while to invest in visiting a couple of the bigger folk festivals, where there are often tents full of luthiers pushing their stuff. You might find one you like even for under that, if you can hear it over the general clamour.
You don't say where you are, but the euros is a clue, I guess you're in Eire. Come over to Toweresy or Cambridge festivals is my suggestion, have a fun time of music and listen to everything. There's usually a good session or two to be had as well.
Secondhand you've got to be lucky in what turns up, and distance buying on ebay also has its own dangers.

check out Oriskany guitars in Huntingdon, PA (type into your browser)... they had a really nice hand made bouzouki with mother of pearl celtic knotwork inlay.

There was a nice Abnett bouzouki on mandolincafe a while back 2nd hand....and sometimes others pop up there too...

Had a Crump for a few years, nice but not for me...Sobells are hard to come across 2nd, or new for that matter! And they will cost you mega-bucks....
Sold my Sobell 10 string Cittern last Nov to a lad in Oz......Was a bit gutted to let it off but wasnt using it too much.
Stefan instruments are some of the best you would ever play, and the workmanship is 2nd to none...
