Chief Wanganui (Member 22360) may have some information about flutes/whistles made by Native Americans. He seems to know more about the World's whistles than most other people.
Are you interested only in current manufacturers or all manufacturers past and present?
The majority of banjo (including tenor banjo) makers of the first half of C20th were American and many of these banjos are still played by Irish musicians. Here are a few names that have stood the test of time :

Orpheum
Ludwig
Weymann
Bacon and Day
Slingerland

Goldtone and Deering are two current American banjo brands that are popular on the trad scene - although Clareen, Dave Bell (Ireland) and Sully (England), between them, take up a sizeable share of the new banjo market in the UK and Ireland.
Let me know if you're needing NAF-related stuff (Native American Flute). Since your project is Irish Music I'm guessing you don't, but I have a lengthy list of sources if anyone's interested.
wish I had my fiddle with me. It's a factory made fiddle from Ohio. Place went out of business in the 1930s along with most of the American fiddle factories
this will sound like some sort of joke, but when the Germans got thier economy back on track with the Nazis, and their currency was still worthless, a load of German made import fiddles flooded America. The German factory fiddles were actually pretty good (fekkin krauts!) and they were really cheap, and they ran the US fiddle factories right out of business
all this happened in the 1930s, so good luck googling any of it
