I think someone at the University of Limerick did a Paper on his music. Not sure what's in there but one of the contributors here did offer a few of the tunes here after copying them from looking there. Probably have to wait until he is dead before a book is published and not sure if even then because he obviously is happier that the tunes are passed on aurally.
There is plenty of Fahey material on the Kane sister albums to learn, not to mention all the other recordings of his music. If you only are after dots/abc/midi - do a search here as there are plenty of his tunes.
The tunes are all in ABC format; I have created a pdf of these tunes for myself which could be made available (although I suppose even modern ITM tunes are in copyright?).

Likely so, Rick, but thanks much to you, and the other respondents, for the suggestions.
On a side-note - what's the best audio source for some Fahey tunes? I've decided it's about time I learn some more of them, after thrashing that one Fahey jig I know to death. Don't Liz and Yvonne Kane play a lot of Fahey tunes?
I suspect that arguably some of the best were those played by the man himself; There were some examples on SoundLantern (I think posted by someone here?) - as of last week unfortunately no longer available.
A couple of good sources already mentioned here - The Kane Sisters and Breda Keville, to which I would add Martin Hayes.
If you search the Tune section here for Paddy Fahy/Fahey and browse through the comments, you will find reference to dozens of other recordings, each having at least one tune which may be of interest.
Paddy Fahey tunebook?
Paddy Fahey tunebook?
Does anyone know if there is a published book of Paddy Fahey compositions?

Re: Paddy Fahey tunebook?
Actually, you just need to look under Details for one tune, e.g.
