Finding s/c accommodation near Ennis can be difficult, especially if your looking for a reasonable deal. From experience, and especially in terms of price, you might be best to aim for somewhere like Kilfenora. It's not that long a drive to Ennis and you've plenty of fine music on tap in the village or nearby.
Our group stayed at Eden Hill. It's a farm outside Ennis. Very nice place. There's a B&B in the main house and there's a separate house for self-catering.

Strasburgh Manor in Inch is beautiful and comfortable, but a bit pricey.
