Firstly there's no such thing as a Galway/Clare style. There are many different styles in these areas. Perhaps what you are referring to is East Galway/East Clare which have some similarities.
If that is the case look up Paddy Carty, possibly the best flute player to come from East Galway. One of his recordings is on iTunes.
Then for general East Galway/East Clare music you've got Martin Hayes, Mary MacNamara, Breda Keville, Claire Keville, Paddy Canny, PJ Hayes, Pat O'Connor, Vincent Griffin, Dympna O'Sullivan. Leon Agnew is a flute player who plays on some recordings, I don't think he's from the area but he plays the music style.
For Galway musicians outside of this style try Frankie Gavin, Mairtin O'Connor, the Kane Sisters, Johnny Connolly and Johnny Óg Connolly. Joe Cooley was from Galway also.
For Clare musicians outside of this style try Bobby Casey, Joe Ryan, Junior Crehan, Willy Clancy, Noel Hill, Mrs Crotty and Tony MacMahon, there's many more but these are the main ones I can think of.
Not sure how many of them are on iTunes but just stick their names in and have a look.
One player who is brilliant but definitely not on iTunes is Paddy Fahey, he's never made a commercial recording but you can locate private recordings if you're lucky. You'll find loads of his tunes recorded by other people on iTunes, just type in his name either with or without the e and you'll see.
Mike Rafferty shouldn't be missed: he is the representative of the East Galway flute players. Very different from Paddy Carty, though. Marcus Hernon is probably the most known flute player from Connemara, the other side of Galway. And look for Peadar O'Loughlin and Meave Donnelly's "The Thing Itself." It's a lovely flute and fiddle duet recording which has many nice tunes from East Galway and West Clare. And any recording by Dublin-born fiddler James Kelly, whose style is rooted in West Clare.
