I saw this done at a pub session near me when I was younger - being younger and stupid I had to have a go - problem is the bow I was using at the time nearly got destroyed in the process!

From my glimpse of the final fraction of a second of that video I think what he did was to undo the frog and hold the frog and stick separately in his right hand, with the hair draped over the strings. His grip would have been such as to maintain tension and direction in the hairs.
Now we know how Bach intended all those complex three- and four-note chords in his solo fiddle works to be played
That's an old Joe Venuti trick, though I've usually seen it done with the stick directly under the strings, not all the way behind the fiddle. Paul Anastasio (formerly with Asleep At the Wheel) does some beautiful four note chording with this technique.
Some old-time string bands apparently used this technique to create full chords and a barrel-organ sound. I've only read about it and have a couple recorded examples -- I've never actually seen it done till now. Wow!
